We love fish tacos around here in all varieties. One of the things I love most about them is how quickly they come together and how healthy they are for you. I have been surprised by how many of my friends think they are “too hard” to make. No way! Seriously, one of the easiest dinners you will ever prepare for your family.
Ingredients
3-4 Tilapia fillets, or enough to feed your family (I usually broil my Tilapia in the oven with a little butter, lemon juice and Citrus Grill seasoning). If I don’t have any fresh, I will use the Tortilla Crusted Tilapia from Costco which my whole family loves.
4 cups of bagged coleslaw mixed with 2-3 Tbsp. of Hidden Valley Ranch Dressing and 2-3 Tbsp. of your favorite salsa (eyeball it and taste, you want it moist but not drenched and a little creamy).
1 can of black beans, drained and heated
1-2 cups of cheese
2 tomatoes, chopped
2 avocados, chopped
1 mango, chopped
2 limes, cut into wedges
Salsa
Corn tortillas (or flour, but we love corn).
Directions
Cook the Tilapia as instructed. While the Tilapia is cooking, mix the coleslaw with the ranch and chop the veggies. If you are using corn tortillas, they are so much better if you heat them on each side in a hot skillet (no oil required)…believe me! Cut the fish into good sized chunks that will fit in a taco. Lay everything out so each person can choose their toppings (Some don’t like fish tacos with beans or cheese, but our family does). Squirt some fresh lime on the top of each taco after it is assembled and ENJOY! A great dinner in about 20 minutes.
