As with most of my great recipes, this one comes from my mom. I can’t think of anyone who doesn’t adore a good Rice Krispie Treat, and this recipe really kicks them up with white chocolate and crushed Oreos…the perfect jazzed up, easy treat that kids and adults go crazy over.
Ingredients:
1 stick of margarine
2 16oz. bags of mini marshmallows
10 cups of Rice Krispies
2 sleeves of Oreos
2 bags of GOOD white chocolate chips (Guittard or Ghiradelli)
Directions:
1. Crush one sleeve of Oreos (not into fine pieces, still a little chunky).
2.  Melt the margarine in a large pot.
3. Stir in the marshmallows until melted, don’t burn!
4. Remove from heat and stir in the Rice Krispies and crushed Oreos.
5. Once mixed, press into a jelly roll pan or cookie sheet.
6. Crush another sleeve of Oreos (leave kind of chunky).
7. Melt 2 bags of white chocolate chips in a glass bowl in the microwave in 30 second increments and stir. Continue until melted.
8. When melted, spread on top of the Rice Krispies, then quickly sprinkle the Oreos on top.
9. Let dry for at least one hour.

ENJOY!!

Frequently Asked Questions: Oreo Rice Krispie Treats

Can I use butter instead of margarine?

Yes. The recipe as my mom wrote it calls for one stick of margarine, and butter substitutes one-for-one. Butter browns slightly as it melts, which adds a little nutty flavor some people prefer. Either way, melt it over moderate heat and add the marshmallows before it starts to darken.

Why does the recipe insist on good white chocolate?

Because cheap white chips often contain little real cocoa butter, and they seize into a grainy paste in the microwave instead of melting smoothly. Guittard and Ghirardelli both melt cleanly and spread in an even layer. Melt in 30-second bursts, stirring each time, and stop as soon as it is smooth.

How big a batch does this make?

A large one. Ten cups of Rice Krispies with two 16 oz. bags of marshmallows fills a full jelly roll pan or cookie sheet, which is why this is a good recipe for a party, a class treat, or a crowd. Halve everything if you want a standard 9×13 pan instead.

How long do they need to set?

At least one hour at room temperature, until the white chocolate topping is firm to the touch. Cutting into them early drags the topping across the bars and makes a mess of the Oreo layer. Do not refrigerate to speed it up — cold makes the marshmallow base hard and difficult to cut.
