For my friends out west, this post will be old news, but for my Michiganders, this is VERY exciting! We now have Tortilla Land Tortillas! You see, we finally got a Costco in Ann Arbor, which means I no longer have to drive to Brighton to get the tortillas we cannot live without.

As you can surely tell, our family loves Mexican food, but it is just not the same without uncooked tortillas. They will completely change your life. Everything tastes better on these tortillas…quesadillas, tacos, burritos, you name it (okay, except enchiladas…they get too soggy). The tortillas come in a package of 44 in the refrigerated section at Costco (sometimes by the hot dogs, sometimes by the fresh salsa) and they cost about $7 and are worth every penny.

Also good to know, they freeze really well (just defrost in the fridge for about 1 day). To find out where else they are carried, you can search here. I am dying to try their corn tortillas too!

I recently took dinner to a friend and she thought they were freshly made from scratch. She was thrilled to find out you can pick them up just a few minutes away. They are incredibly easy to prepare, you don’t need oil or anything else, just a hot pan. If you have not given them a try, you absolutely must!

Instructions: 

Throw the tortilla on a hot pan. Wait until bubbles form. Flip.

 

Cook the other side until bubbles form below and you are finished! Just a few seconds for a incrementally better meal!

If you make quesadillas, you can cook one side, turn the heat off or way down, flip, add the cheese, fold over and then cook on the other side until the cheese is melted. Super easy. We also love them with butter and cinnamon and sugar for a special treat. Hope you love them as much as we do!
